Easy lamb meatballs with sweet chilli yoghurt

Serves 5

For the meatballs:

  • 1kg lamb mince
  • 1 teaspoon garam masala
  • 1 tablespoon sweet chilli sauce
  • 2 pinches salt
  • Good grind of pepper
  • 1 large handful coriander leaves, chopped
  • 1/2 teaspoon sesame seed oil
  • Juice of 1/2 lemon

For the sweet chilli yoghurt:

  • 3 tablespoons Greek yoghurt
  • 1 teaspoon smoked paprika
  • 1 tablespoon sweet chilli sauce
  • Juice of 1/4 lemon

Cooking time: 20 minutes
Total time: 30 minutes

Easy lamb meatballs with sweet chilli yoghurt

Creating a recipe which takes minutes to throw together which I know is nutritious and that the whole family will eat makes my heart sing! If you don’t like lamb (I find it can be one of the marmite meats), then substitute for beef or pork instead. Make sure you make PLENTY of sauce. Any leftovers can be enjoyed as an afternoon pick-me-up dip the next day.

Method

Preheat your grill to 180/350/gas 4.

Place the meatball ingredients in a large bowl and mix well. Using your hands, pick up a scoop of the meatball mix and roll into a ball. Repeat until you have finished the mix.

Carefully place them on a skewer (I do 4 at a time but you could put as many or as few as you like), ensuring there is a small gap between each to let them cook.

Place under the grill and grill for 10 minutes on either side, carefully turning in between.

Meanwhile, make the sweet chilli yoghurt by placing all the ingredients into a bowl and mixing.

Enjoy hot with plenty of sauce!
